Before there was a trailer, there was a butcher counter. Juan spent years breaking down whole cuts for a local restaurant — learning exactly where a brisket wants to be trimmed, why a turkey leg dries out, and what a properly stuffed sausage should feel like. Barbecue wasn't a hobby that got out of hand; it was the natural next step for a man who already knew meat.
In 2024, he and his wife parked their trailer on State Highway 78 in Lavon and lit the first fire under the name One's BBQ — the bull on the badge, the family behind the window. No franchise playbook, no warming ovens. Post oak, patience, and a butcher's eye.
Word traveled the way it always does in Collin County: somebody's cousin tried the brisket, then the office wanted trays for Friday, then Thursday turkey legs turned into a tradition with its own following. Folks now drive in from Wylie, Rockwall, Sachse, Princeton and Farmersville — reviewers put the brisket up against the famous big-city joints, and we'll take that fight any day.
We're still small on purpose. One pit means every slice gets the same attention, and when the day's smoke is gone, we'd rather sell out than sell you something reheated. That's the deal, and it's non-negotiable.
