Before One's BBQ, Juan broke down whole cuts for a living. That's why the brisket gets trimmed the way it does, why the turkey legs stay juicy, and why the sausage snaps before it gives you that cheese pull.
In 2024 he parked the trailer on State Hwy 78 in Lavon and let the smoke do the advertising. It worked.
